As you will probably come to learn, I often make some sort of stir-fry for dinner. They are easy, quick, delicious, and usually pretty healthy- so it's a total win! I get a little tired of my usual veggies and rice, though, so I attempted to finally use the glass noodles I have had in my pantry for a while now. I don't know about you, but I tend to get grand ideas about different dinner options and I overload on quirky ingredients that I have never cooked with before...enter glass noodles. I modified this recipe from Food and Wine based on what I had on hand and it turned out great! The colors of the vegetables are so beautiful and fresh, and the noodles were a great way to change up the "starch" portion of my meal. The noodles reheated really well for lunch the next day and tasted just as good (if not better from soaking up those juices a little more over night).
