So I just discovered a new healthy treat, chia seeds! Yes, chia seeds, as in the namesake of the chia pet from my childhood! These little seeds are jam packed with vitamins and great benefits, especially Omega-3. When mixed with liquid the seeds turn into a gelatin like texture- similar to tapioca. I love tapioca, so that is fine by me! Chia seeds can be used with many other normal meals, like yogurt, oatmeal, in salads, etc. I'll most likely use these to make simple pudding desserts and in my breakfast yogurt.
The package of seeds I purchased at the store had an easy recipe on the back and I just adapted it a bit. I stirred together coconut milk, chia seeds, cinnamon, vanilla extract, and stevia (a plant based sugar alternative). Then I let it sit in the refrigerator for about 2 hours to get it to the consistency I wanted.
