Carrot Crunchies

 I always try and eat healthy, but let's be honest- sometimes it's just easier to go out for dinner and eat cheez-its for snacks. In deciding to try something new and healthy that I could actually munch on, I tried my hand at making crunchy, salty, carrot chips! And trust me- they are quite yummy! Next time I will likely cut them on a diagonal so that they are more "chip" like and less like fries.

Here is how I made them:

- Preheat oven to 350 degrees
- Peel carrots and slice in thin, wide strips (or diagonally for large chips)
- Toss in olive oil, salt, pepper, onion powder, and dried rosemary
- Bake in the oven for about 30 minutes (less or more depending on how crunchy you want them)
