Inspiring Astrology

I recently found these great photos from an editorial in Vogue UK back in December 2010. The issue depicted all 12 astrological signs, but these were a few of my favorite. I think they are so creative with the interpretations of the different signs of the zodiac. Scorpio is the best by far, in my opinion, just the shape of the model and the ombre backdrop! I love it!

Sautéed Glass


As you will probably come to learn, I often make some sort of stir-fry for dinner. They are easy, quick, delicious, and usually pretty healthy- so it's a total win! I get a little tired of my usual veggies and rice, though, so I attempted to finally use the glass noodles I have had in my pantry for a while now. I don't know about you, but I tend to get grand ideas about different dinner options and I overload on quirky ingredients that I have never cooked with before...enter glass noodles. I modified this recipe from Food and Wine based on what I had on hand and it turned out great! The colors of the vegetables are so beautiful and fresh, and the noodles were a great way to change up the "starch" portion of my meal. The noodles reheated really well for lunch the next day and tasted just as good (if not better from soaking up those juices a little more over night).

Swing into Sweaters



Seeing kids going back to school and buses slowing down traffic, I realized that the fall season is right around the corner! One of my favorite parts about fall is that I can wear SWEATERS! I'm a bit obsessed and, lucky for me, this fall chunky, colorful, quirky sweaters are totally acceptable. Well, they are always acceptable in my book. I can't wait to pair sweaters like these with skinny jeans and knee high boots, high waist skirts and ankle booties- oh the options!

Blue Springs

 Happy Monday! This weekend I took a trip with some friends to Palm Springs. The weather was almost unbearably hot but the pool felt amazing. We stayed at the Ace Hotel, which had great decor and such a casual, fun feel. This wall was so colorful I just had to take some photos by it. I will definitely be returning! I got this hat at Hats Unlimited in the adorable downtown district of Palm Springs. It is so cute and was so perfect to keep the desert sun off my face and neck. Always remember to apply lots of sunscreen! Sunburns are never fun.

Chi-chi-chi-Chia!


So I just discovered a new healthy treat, chia seeds! Yes, chia seeds, as in the namesake of the chia pet from my childhood! These little seeds are jam packed with vitamins and great benefits, especially Omega-3. When mixed with liquid the seeds turn into a gelatin like texture- similar to tapioca. I love tapioca, so that is fine by me! Chia seeds can be used with many other normal meals, like yogurt, oatmeal, in salads, etc. I'll most likely use these to make simple pudding desserts and in my breakfast yogurt.

The package of seeds I purchased at the store had an easy recipe on the back and I just adapted it a bit. I stirred together coconut milk, chia seeds, cinnamon, vanilla extract, and stevia (a plant based sugar alternative). Then I let it sit in the refrigerator for about 2 hours to get it to the consistency I wanted.

Sunnyside

 I purchased this dress at Marshalls (of course, where else?) and couldn't find it online, so here is a similar dress by the same company. The white lace, mid-thigh length, and 50's feel make it great for so many occasions. The bow can be tied either in the front or the back, but I loved the look of a small bow on the black zipper in the back. My boyfriend surprised me with the shoes almost 3 years ago and it took me a while to warm up to them. At first, I thought they were a little too "much" but now they are one of my favorite pairs! Something that is so important about fashion is having confidence in what you are wearing. If you love bright colors or crazy shoes- then rock them and love them! I promise, if you love what you are wearing, chances are other people will too :)

This purse is another great find from my mom's closet. It's so delicate and is the perfect size for a little "going-out" purse.

Carrot Crunchies


 I always try and eat healthy, but let's be honest- sometimes it's just easier to go out for dinner and eat cheez-its for snacks. In deciding to try something new and healthy that I could actually munch on, I tried my hand at making crunchy, salty, carrot chips! And trust me- they are quite yummy! Next time I will likely cut them on a diagonal so that they are more "chip" like and less like fries.

Here is how I made them:

- Preheat oven to 350 degrees
- Peel carrots and slice in thin, wide strips (or diagonally for large chips)
- Toss in olive oil, salt, pepper, onion powder, and dried rosemary
- Bake in the oven for about 30 minutes (less or more depending on how crunchy you want them)

Sushi and Satin

I went out to sushi last week and finally decided to wear these super comfy new pants I discovered at Marshalls (as per usual). Since they are so feminine and light, I didn't want to weigh them down with a heavy belt, so I tied a little chiffon ribbon around my waist instead. With the white top and light colored pants, the outfit needed some kind of color, so I went with an aqua necklace that I really love. It works with so many outfits and occasions.
